I’ve been eating really well since we started paleo. nom, nom. And losing weight too.
We are not strict paleo at this point. We still to dairy (but I don’t drink milk – think yogurt, cheese, etc.), cocoa, protein powder, and natural sugar free sweeteners. So for the sticklers out there, yes, I understand that my diet is not hardcore paleo. But still.
Seriously, I have never eaten so well on a diet.
For breakfast I had a protein shake with a scoop of chocolate ice cream (homemade with coconut milk), and it tasted just like a milkshake! Who get’s to have milkshakes for breakfast!?
For lunch we had a crock pot beef stew, thickened with pureed cauliflower. So, instead of nutritionally void nasty flour, we got an extra helping of super nutritious veggies – and we didn’t suffer a blood sugar spike followed by the typical afternoon crash! It was awesome – so hearty and yummy. Again, who get’s beef stew on a diet (and I use the term loosely, as this is actually a lifestyle change for the better).
For supper I had a hamburger patty on a bed of lettuce, topped with pepper-jack cheese, tomato, and guacamole. Delicious! I’m not fat phobic, and I’m a lot more comfortable with animal fats than those nasty vegetable oils that have to be chemically soaked and pressed and heated into oblivion just to get a little drop of oil out. But I did cook these patties in the oven on a rack with a drip pan, so they were pretty lean too. Who gets to do that, and lose weight too!? (An average of 3 lbs a week so far.) This girl!
I keep thinking I want to take pics and post them here, I could have my own little paleo food journal. But keep forgetting. I guess I get so into the cooking and eating. I doesn’t even cross my mind until I’m halfway finished with my meal, and by then it’s not nearly as pretty. Oh well. There will be photos in the future, I’m just not sure when.
